This is a simple but amazing recipe for breaded fish. Cod fillets are dipped in egg and then coated in a bread crumb Parmesan mixture.

Finding a fish recipes that my family enjoys and will actually eat can be difficult sometimes. But luckily I found this one. It is such a simple, delicious way to serve fish and my kids always want seconds. I like to serve the fish with a light tartar sauce, made with mayonnaise and plain yogurt, and homemade french fries. To get their vegetables in, you can have vegetables and dip, or my favourite is to serve coleslaw. Either way, you will be asked to make this recipe again and again. 

Crispy Baked Breaded Fish
This recipe calls for bread crumbs which I never buy, I always make my own. It is super easy, just place a slice of bread or two on a rack and allow to dry for a couple hours. Break into small chucks and grind in a (clean) coffee grinder. You may have to do a few batches depending on the size of your grinder. If you forget to dry the bread, no worries, fresh bread works just as well but the coating may not be as crispy. You can broil the fish after its done cooking for a minute or so to get the coating nice and crispy. 

Spray a baking sheet with cooking spray and set aside.
In a swallow bowl, combine the bread crumbs, Parmesan cheese, dried parsley, thyme, paprika, salt and pepper.

Lightly beat eggs in another shallow bowl. 
To slightly dry the fish before coating, I remove them from the package and place on a a couple paper towels. Dip a fillet in the egg mixture first and then in the crumb mixture coating both sides with crumbs. Place on baking sheet.

Bake at 450F for 8-10 minutes.

Serve with tartar sauce.

For the fish
  1. 2/3 - 1 cup dry unseasoned bread crumbs
  2. 1/4 cup Parmesan cheese
  3. 2 teaspoons dried parsley
  4. 3/4 teaspoon thyme
  5. 1/2 teaspoon paprika
  6. salt and pepper
  7. 2 eggs
  8. 6-8 cod fillets
Tartar Sauce
  1. 1/4 cup mayonnaise
  2. 1/4 cup plain yogurt
  3. 1 tablespoon sweet green relish
  4. 2 teaspoons prepared horseradish
  5. 2 teaspoons lemon juice
  6. 1 teaspoon dried dill
Instructions
