You’ll never bother stuffing peppers when you can have this healthy casserole version of stuffed peppers. This undone stuffed pepper casserole is fast, easy, and loaded in flavour and cheesy goodness. 

 

Today the youngest was feeing a bit under the weather and didn’t eat much during the day. So I wanted to make a meal that I knew he would eat. My kids always like this casserole. I like how easy it all comes together.  And by using quinoa in place of the rice, you get added protein along with the other health benefits of quinoa.

To start, cook the quinoa according to the package instructions. Set aside.

In a large skillet, cook ground beef, onions, and garlic until the beef is not longer pink. Add the shredded carrot, shredded zucchini, and chopped pepper. Cook until the vegetables are soft.

Undone Stuffed Peppers

Add the pasta sauce, cooked quinoa and shredded cheese to the skillet. Stir to combine.

Spoon into a 2 L casserole dish that has been lightly greased. Top with shredded cheese if desired. Bake uncover for 25 minutes at 350F.

Remove and let stand for 10 minutes before serving.

Ingredients
  1. 1 cup quinoa, uncooked
  2. 1 lb ground beef
  3. 1 onion, diced
  4. 3 cloves garlic, minced
  5. 2 medium carrots, shredded
  6. 1 medium zucchini, shredded
  7. 1 large green pepper, diced
  8. 1 1/2 cup pasta sauce
  9. 1 cup cheddar cheese, shredded
Instructions

  7. Preheat oven to 350F. Bake uncover for 25 minutes.
  8. Remove and let stand for 10 minutes before serving.
