Sausage Lentil Barley Soup

Chewy barely, spicy sausage and nutty green lentils are used to make this hearty and thick soup. Serve with a slice of homemade bread or biscuits for a delicious meal.

I love the combination of lentils and barely together in the soup. They compliment each other in both flavour and texture. They also combine to provide all essential amino acids for a complete protein. This is such a delicious, healthy and easy soup to make. It’s perfect on a cool fall or winter day.

Today we had our first snow fall. Well really more of a dusting, but enough that we could get out the shovels. The kids were super excited! We must have been out for a good half hour moving the snow around on the driveway making it into a big pile. It was pretty fun to watch them have so much fun with such a small amount of snow. 
With the temperature falling I knew that this sausage lentil barely soup was just what we needed for supper. The sausage adds a nice spicy kick while the barley gives the soup a nice chewy texture. The lentils add a mild nutty peppery flavour. Vegetables and chicken stock round out this delicious hearty soup. I also made a loaf of Irish soda bread to serve.

In a large non stick skillet cook the sausage. Once cooked, remove the sausage and drain off any fat from the pan.

Add onion, garlic, celery, carrots and cook for about 7-10 minutes or until vegetables begin to soft.

Add zucchini and sweet potato. Cook an additional 10 minutes.

Add chicken stock and water and lentils and barley. Bring to a boil and reduce heat to low and simmer for 40 minutes stirring occasionally.

Turn off heat and add spinach to wilt. Add sausage and heat through. Serve

Ingredients
  1. 3 mild Italian sausages
  2. 1 large onion, chopped
  3. 3 cloves garlic, minced
  4. 2 medium carrots, chopped
  5. 3 large stalks celery, chopped
  6. 1 medium zucchini, chopped
  7. 1 small sweet potato, cubed
  8. 4 cups chicken broth
  9. 2 cups water
  10. 1/2 cup green lentils, rinsed
  11. 1/3 cup barley, rinsed
  12. 1 cup fresh spinach, packed
  13. salt and pepper to taste
