Grilled Black Bean Quinoa Burrito

A meatless Mexican inspired burrito. Filled with vegetables, black beans, quinoa and cheese. The burrito is then grilled so it is nice crispy on the outside and and gooey on the inside. Serve with sour cream and salsa.

My original intention was to bake these burritos covered in a layer of salsa. But at the last minute I decided to grill them instead. I am so happy I did! It made the burrito into kind of a panini that can be eaten like a sandwich. I served it with some salsa and sour cream for dipping. The kids loved them!

This meatless dish is made with lots of vegetables, black beans, and quinoa. It is spiced up with some chili powder and cumin to give it a Mexican flavour. I love cooking with black beans because they are so nutritious. They are high in protein, fibre and iron. Quinoa is another food I love as it is a complete protein. It also has iron, fibre. This is a fantastic meatless Monday meal!

Grilled Black Bean Quinoa Burritos
In a small sauce pan, cook quinoa according to package directions. Set aside.
In a large skillet cook onions, garlic, carrots, zucchini and bell peppers. Cook for about 10-15 minutes or until the vegetables are soft.

Add black beans, corn and quinoa. Mix well.

Spread down the centre of a tortilla and top with shredded cheese.

Wrap the tortilla and place on a hot grill or skillet. I used my George Forman grill. Cook until the outside is brown and crispy and the inside is warm and gooey. Serve with salsa and sour cream.

Ingredients
  1. 1/2 cup quinoa
  2. 1 large onion, chopped
  3. 3 cloves garlic, minced
  4. 2 medium carrots, chopped
  5. 1 medium zucchini, chopped
  6. 1/2 red bell pepper, chopped
  7. 1/2 green bell pepper, chopped
  8. 1/2 cup frozen corn
  9. 1 can (19 oz/ 540ml) black beans, drained and rinsed
  10. 6-8 tortillas
  11. Salsa and sour cream for serving
Instructions
  1. In a small sauce pan, cook quinoa according to package directions. Set aside.
  2. In a large skillet cook onions, garlic, carrots, zucchini and bell peppers. Cook for 10-15 minutes or until the vegetables are soft. Add black beans, corn and quinoa. Mix well.
  3. Spread the filling down the centre of a tortilla and top with shredded cheese. Wrap the tortilla and place on a hot grill or skillet. Cook until the outside is brown and crispy and the inside is warm and gooey. Serve with salsa and sour cream.
