This is a perfect meal for midweek; it comes together quickly and tastes delicious. The cream sauce is made with milk so it has fewer calories and less fat then a cream based sauce. The sauce is then poured over juicy tender chicken, steamed broccoli and rotini pasta. Top with shredded cheese to finish this delicious main meal.

“Is this new?” is a question I here often from my kids around the supper table. I love trying new recipes or remaking an old one. That means my family are my taste tasters. Not that they complain; in fact they usually enjoy most of what I make and even surprise me by enjoying a new recipe that I didn’t think worked. Tonight though I new I had a winner with this chicken broccoli pasta dish. What’s not to love? The broccoli is steamed to perfection, the chicken is juicy, the sauce creamy and the cheese gooey. The family loves it. I hope you will as well.

Creamy Chicken Broccoli Pasta
In a medium sauce pan, cook pasta according to package direction. Drain and set aside.
In a large skillet over medium high heat add 1/4 cup water and chicken breast. cook the chicken until no longer pink inside. you may need to add a bit more water as the chicken cooks. Remove from skillet and set aside to cool. I always cook my chicken breasts whole. I have this thing about handling raw meat and avoid it whenever I can. Once the chicken is cooked and cooled enough to handle, I then cut it into bite sized pieces. I know it’s not the proper way to cook chicken but it works for me and it is so much easier.

In the same skillet with the water left over from cooking the chicken (should be about 1/4 cup) add the onion, garlic and carrots. Cover and Steam the vegetables on medium high heat for 5-7 minutes or until soft. Creamy Chicken Broccoli Pasta

Add the broccoli and more water if needed( 2-3 tablespoons). Cover and steam the broccoli for about 3 minutes or until it is bright green and tender crisp. Remove skillet from heat, uncover and set aside.

In a medium sauce pan whisk together the chicken stock, milk and flour. Turn on heat to medium high and cook, whisking mixture continuously until it thickens slightly. Remove from heat and stir in half the shredded cheese and a dash of cayenne pepper.

Add the chicken and pasta to the vegetables. Pour the sauce over top and mix well. Top with remaining cheese. Let stand for 5 minutes to let the cheese melt before serving.

Ingredients
  1. 2 cups rotini pasta
  2. 2 chicken breast
  3. 1 large onion, chopped
  4. 3 cloves garlic, minced
  5. 2 medium carrots, shredded
  6. 3 cups broccoli
  7. 1/8 teaspoon cayenne powder
  8. salt and pepper
  9. 1 cup milk
  10. 1 cup chicken broth
  11. 1/4 cup flour
  12. 1 cup cheddar cheese
