Spicy Sausage and Ham Jambalaya 

Jambalaya is a French word meaning “jumbled”, and this dish lives up to its name! A tasty mix of spicy sausage, mild ham, nutty brown rice, and lots of hearty vegetables. There’s something for everyone!

Spicy Sausage and Ham Jambalya

I was feeling a bit off this morning. Was up late last night, up early this morning,  and I don’t drink coffee, so let’s just say I was a bit “jambalaya”ed. 😉 This dish fit prefect for my mood. It’s straight forward ingredients made it easy for me to make supper, even in my jumbled state. 

Spicy Sausage and Ham Jambalya

In a large skillet, cook the sausage until it’s cooked through and browned on the outside. Remove from the skillet and cool on a plate. Once cool, slice into bite sized pieces. In my house that means quarter each sausage and then slice.

While the sausage is cooling, sauté the onion and garlic in the same skillet. 

 Spicy Sausage and Ham Jambalya Once the onion is soft add in your carrot, zucchini, and celery. Cook on medium heat until the vegetables are soft.  Spicy Sausage and Ham Jambalya   
Add in the green beans and yellow wax beans, and tomatoes. Cook for about 5 minutes.

Spicy Sausage and Ham Jambalya

Last add the cooked rice, chopped ham, and sausage. Mix well and heat through. (I kinda cheated and did this step at the same time as the beans and tomato).
Top with shredded cheese. Let stand to melt the cheese before serving warm.

Ingredients
  1. 1 - 2 tablespoons butter, if desired
  2. 4 cloves garlic, minced
  3. 1 medium onion, diced
  4. 1 large carrot, shredded
  5. 1 medium zucchini, diced
  6. 2 stalks celery, diced
  7. 1 cup cooked ham
  8. 3 - 4 sausages
  9. 3 cups chicken broth
  10. 1 teaspoon paprika
  11. 1 1/2 cups long grain brown rice
  12. 1 can green beans
  13. 1 can yellow wax beans
  14. 2 tomatoes
  15. 3 green onion, diced
  16. 1 cup cheddar cheese, shredded
Instructions
  1. In a medium saucepan, cook rice with the broth and paprika. Set aside.
