Hearty Beef Stew

A hearty beef stew that is sure to satisfy family or friends.

Today was a cool, wet day. Just the kind of weather you need for a nice big bowl of a thick beef stew. This beef stew recipe has been in my book for years. It’s full of all things good. I also made a loaf of Irish soda bread to serve with the stew. Both turned out fantastic. I hope you enjoy them.

I have found that if I simmer the beef in the can tomatoes and beef broth, the beef is very tender. So I always start with the beef first. 

In a large skillet, add your beef cubes, can tomatoes, and beef broth. Simmer on medium heat until the beef is cooked. Remove from the skillet and set aside.

To the skillet add your Montreal steak spice, pearl barley, and vegetables; potato, carrot, celery, zucchini, onion, and garlic. Simmer until the vegetables are tender and the barley is cooked, about 30 minutes. Stir occasionally.

Once the vegetables are tender, add the peas, corn, and spinach and the beef cubes. Stir and heat through. Remove for heat and serve warm.

Ingredients
  1. 1 lb stewing beef, cut into small cubes
  2. 1/2 cup pearl barley, rinsed
  3. 1 (796ml) can crushed tomatoes
  4. 1 cup beef broth
  5. 1 large onion
  6. 3 cloves garlic, minced
  7. 2 medium potatoes, cubed
  8. 2 - 3 stalks celery, chopped
  9. 1 medium zucchini, diced
  10. 2 medium carrots, diced
  11. 1 cup corn, frozen
  12. 1 cup peas, frozen
  13. 1 cup spinach, frozen or fresh
  14. 1/2 - 3/4 teaspoon Montreal Steak Spice
  15. pepper to taste
Instructions
