Slow Cooker Beef and Pasta

Stewing beef mixed in a delicious tomato and mushroom sauce. Toss everything into your slow cooker in the morning and let it cook all day. Cook the pasta and spoon the beef mixture over top of pasta. An easy meal for a busy weeknight.

Today’s post is short and sweet. Busy day and evening so I was really glad that one the menu was this slow cooker beef pasta dish. Toss everything in the slow cooker and let it cook all day. Boil the pasta just before you’re ready to eat and supper is ready. Love that! 

 

I buy the large packs of stewing beef from Costco and divide it into meal sized portions to freeze. For this recipe I pulled out a frozen pack and tossed it into the slow cooker. To that you add the can tomatoes, mushrooms, onion,  mushrooms, soy sauce, vinegar, brown sugar, oregano and salt . Stir (as best you can if you beef is frozen like mine 🙂 ) cover and cook on low for 5-6 hours.

Cook pasta according to package instructions. To serve spoon pasta into a bowl and top with the beef mixture. Serve warm.

  4. 1 1/2 lbs stewing beef cubes
  5. 1 can (27 oz/ ) diced tomatoes
  6. 1 can (5.5 oz/ 156ml) tomato paste
  7. 1 1/2 cup sliced mushrooms, fresh or canned
  8. 1 onion, chopped
  9. 4 cloves garlic, minced
  10. 2 tablespoons soy sauce
  11. 2 tablespoons vinegar
  12. 2 tablespoons brown sugar
  13. 1 teaspoon oregano
  14. 1/2 teaspoon salt
  15. 1/4 teaspoon pepper
  16. 1/4 teaspoon red pepper flakes
  17. 6 cups rotini noodles, uncooked
Instructions
  1. Add stewing beef cubes to your slow cooker. To that you add the can tomatoes, mushrooms, onion, mushrooms, soy sauce, vinegar, brown sugar, oregano and salt . Stir, cover and cook on low for 5-6 hours.
  2. Cook pasta according to package instructions.
  3. To serve spoon pasta into a bowl and top with the beef mixture. Serve warm.
