Chicken and Broccoli Fettuccine Alfredo 

A creamy chicken broccoli fettuccine dish. It is delicious and super easy to make. Perfect for a weeknight meal.

Chicken Broccoli Fettuccine Alfredo

Believe it not, I never had fettuccine Alfredo until a few years ago. I didn’t know what I was missing until I was over at a friends house for supper and she served us this dish. Oh my. It was unbelievable! I had to know how to make it. “Oh it’s super easy” she said, “I just buy a jar of pre made sauce and pour it over pasta and chicken.” Oh… Darn coz that really isn’t my style. So after that night, I did some internet research to find a homemade version that my family would like just as much, or hopefully more. I have adjusted the original recipe I found and I hope you enjoy it as much as we do.

Chicken Broccoli Fettuccine Alfredo
Cook pasta according to package instructions. 
In a large nonstick skillet over medium high heat, cook chicken breasts until no longer pink inside. I like to brown the chicken slightly, but it’s not necessary. Remove the chicken and set aside.

In the same skillet, add oil and sauté onions and garlic. Add chicken broth and flour and whisk to combine. Stir in cream cheese, Parmesan cheese, nutmeg and pepper. Stir constantly until the sauce begins to boil and starts to thicken. Reduce heat to low and simmer. Add broccoli florets and allow to steam for 3 – 5 minutes. Remove from heat add the chicken and pasta to the skillet and toss to combine. Serve immediately.

Ingredients
  1. 12 oz fettuccine
  2. 2 chicken breasts, cut into strips
  3. 1/2 tablespoon olive oil
  4. 1 medium onion, chopped
  5. 4 cloves garlic, minced
  6. 1 cup broccoli florets, or more if desired
  7. 1 1/2 cup chicken broth
  8. 4 tablespoons flour
  9. 1/3 cup cream cheese
  10. 1/2 cup Parmesan cheese
  11. 1/4 teaspoon nutmeg
  12. 1/8 teaspoon pepper
Instructions
