Chicken Lasagna

This delicious lasagna has rotisserie chicken, feta cheese and olives along with cottage cheese and lots of vegetables.

A different take on traditional lasagna. This chicken lasagna is full of flavour, gooey cheese, and yummy vegetables. It has a Mediterranean flavour from the black olives and feta cheese. This recipe uses a store bought rotisserie chicken, vegetable pasta sauce and oven ready lasagna noodles to reduce prep time. I add more vegetables to the pasta sauce because I love to sneak in as many vegetables as I can. 🙂

The thing I like about this lasagna, aside from how good it tastes, is the way it is all put together. It is done in layers of each ingredient rather then just one layer of cheese and then one layer of sauce. 

Spray a 9×13 inch baking pan with cooking spray and set aside. 

In a large bowl, combine vegetable pasta sauce, onion, carrots, zucchini and red pepper.

In a medium bowl, combine cottage cheese, spinach, egg and oregano.

To assemble lasagna, spoon about 1 1/2 cups of the pasta sauce mixture over the bottom of the prepared baking pan. Cover the sauce with lasagna noodles, you should need about 4. Top with enough sauce to cover the noodles (about 2 cups) and 1/3 chicken, 1/3 feta, 1/3 mozzarella and 1/3 olives. Cover with noodles, followed by 1/3 chicken, all of the cottage cheese mixture, 1/3 feta, 1/3 mozzarella and 1/3 olives. Finish with noodles, and the rest of the sauce, chicken, feta, mozzarella and olives.

Cover loosely with foil and bake at 375F for 40 minutes. Remove foil and bake an additional 5 minutes. Let stand for 15 minutes before serving.

  2. 1/2 cup squeezed dry chopped frozen spinach, thawed
  3. 1 egg
  4. 1/2 teaspoon oregano
