Crispy baked flautas filled with chicken, vegetables and cheese. These are a perfect Mexican main meal or appetizer.

I found this recipe on Jocooks.com. I have to admit that I had no idea what a flautas was. I actually had to google it. Turns out that I have made these Mexican type meals before but I’ve just called them tacos. According to Wikipedia a flauta is a small rolled-up tortilla and some type of filling, including beef, cheese or chicken. The filled tortilla is then crisp-fried. to make mine, I bake them in the oven to get a nice crispy tortilla. These are easy to make and delicious to eat. Usually you would use a small 6 inch tortilla, but I always buy the large 10 inch flour tortillas. When you make this recipe feel free to use the size you prefer. 

To shred the cooked chicken it is easiest to cut the chicken “with the grain” if that makes sense. Shredding the chicken makes it easier to wrap the flautas.

Chicken Flautas 
For the cheese, use what you have on hand. I used all old cheddar cheese but Monterrey jack, Colby, Tex Mex blend or what ever you want to try would work well. Next time I make these I’m going to add some black beans and red or green pepper.

Spray 9×13 inch baking dish. Set aside.

In a large heat olive oil over medium high heat. Sauté onion, garlic, carrot and zucchini until vegetables are soft.

Add corn, salsa, chicken and sour cream. Stir to combine. Chicken Flautas

Cook another 3 minutes or until heated through. Remove from heat and stir in cheese.

Spoon filling down middle of tortilla.

Roll tightly. Place in single layer in prepared pan. Brush with melted butter. Bake 400F for 15 minutes or until nicely browned.

Serve with extra salsa and sour cream if desired.

Ingredients
  1. 2 chicken breasts, cooked and shredded
  2. 1 tablespoon olive oil
  3. 1 onion, chopped
  4. 3 cloves garlic, minced
  5. 1 medium carrot, shredded
  6. 1 medium zucchini, shredded
  7. 1/2 cup frozen corn, thawed
  8. 1 cup salsa
  9. 1 cup shredded cheese
  10. 1/4 - 1/2 cup sour cream
  11. 8 - 10 inch flour tortillas
  12. Melted butter for brushing over flautas.
Instructions
  1. Spray 9x13 inch baking dish. Set aside.
