I adore mini muffins and these lemon poppy seed are perfect! They are moist and soft and have a wonderful lemon flavour.

I have a delicious recipe for a healthy lemon loaf but it doesn’t call for poppy seeds. When I was thinking of baking ideas for over the holiday, I wanted to dress up the lemon muffins a bit by using poppy seeds. I knew I’d be making mini muffins as well so that I could serve a crowd and not be in the kitchen for days baking. 😉 I used the loaf recipe and a recipe I found on wannacomewith.com and came up with these cute little lemony muffins. Enjoy!
Make sure that your butter is really soft before mixing so that you don’t get clumps. Room temperature is probably not going to be soft enough for it to mix well. I would microwave the butter to help it soften. I didn’t do this and ended up with a big clumpy mess when I tried beating the butter with the other wet ingredients – I’ll know better for next time. The baking powder is 1 tablespoon which seems like a lot I know. But I have read that to get a nice fluffy light muffin you need to get the correct balance between the leavening agents. For the loaf I didn’t use anywhere near this much but I thought I’d see what happened for these muffins. They were nice and fluffy, next time I’ll have to do a side-by-side comparison.

Preheat oven to 350°F. Lightly grease your mini muffin tins, both inside and along the top edge. 
In a large bowl, combine the sugar and lemon zest. Add the flour, baking powder, baking soda, salt, and poppy seeds. Mix together and set aside.

In another bowl add softened butter, eggs, milk, yogurt. lemon juice and vanilla. Beat using an electric mixer until well combined.

Add the wet ingredients to the dry ingredients and stir together until just blended. Remember to not over mix muffins.

Spoon batter into prepared muffin tins. I got about 4 dozen mini muffins, baked in two batches.
Bake for about 15-20 minutes until a toothpick inserted in the centre of a muffin comes out clean. Allow to cool on a wire rack for about 5-10 minutes before removing from the muffin tin. Allow to cool completely on the rack. Store muffins in air tight container in refrigerator for up to 20 days.

  1. 1 cup granulated sugar
  2. zest of 1 lemon
  3. 3 cups all-purpose flour
  4. 1 tablespoon baking powder
  5. 1/2 teaspoon baking soda
  6. 1/2 teaspoon salt
  7. 1/4 cup poppy seeds
  8. 3/4 cup unsalted butter, softened
  9. 2 large eggs
  10. 1/2 cup whole milk
  11. 1/2 cup fresh lemon juice (about 2 lemons)
