Sloppy Joe Enchiladas

A classic sandwich with a twist. These are made with a spicy homemade enchilada sauce and a few extra vegetables. Served on a lightly toasted bun and covered in gooey cheese they are a great weekday meal.

These sloppy joe enchiladas will be a huge hit with you and your friends and family. They sure were with mine! They absolutely loved the ground beef filling in a spicy tomato based sauce. In fact, they asked for seconds of just the filling! I found the recipe for sloppy joes on twopeasandtheirpod.com They have some amazing recipes on their blog. I knew that I would be adding a few more vegetables to the recipe and making my own enchilada sauce as I am never able to find it in the store. 

Sloppy Joe Enchiladas
In a large skillet cooked lean ground beef over medium high heat until no longer pink. Add onion, garlic, carrots, zucchini and bell pepper. Sauté until vegetables are soft, about 15 minutes, stirring occasionally.

Add the Enchilada sauce to the cooked vegetables in the large skillet. Stir well.

Cut large buns in half. Place bottom halves on a baking sheet. Broil until lightly toasted. Keep an eye on them because they can go from lightly toasted to black in seconds. Remove and spoon beef filling over bottom halves.

Top with shredded cheese. Place the top halves on the sheet and broil again until the cheese has melted. Place top bun on each sandwich and serve.

Ingredients
  1. 1 lb lean ground beef
  2. 1 large onion, chopped
  3. 3 cloves garlic, minced
  4. 2 medium carrots, shredded
  5. 1 medium zucchini,shredded
  6. 1 yellow bell pepper, chopped
  7. 3 stalks celery, chopped
  8. 2 cups enchilada sauce
  9. 1/2 cup mozzarella cheese, shredded
  10. 6 buns, halved
Instructions
