Napa Cabbage Salad with Teriyaki Chicken

  This is a super quick meal to make and full of flavour! The teriyaki sauce on the chicken is also used in the dressing for the salad, you will be going back for seconds!

This chicken needs to be marinated in this recipe so a bit of pre-planning is required. The teriyaki sauce is super simple to make. You will need 4 boneless, skinless chicken breasts for this marinade or scale the recipe back if you are only cooking for two.

Whisk all the marinade ingredients in a small bowl. Place the chicken in a ziplock bag and pour in marinade. Close tightly and refrigerate for at least 3 hours, ideally 4 hours. Make sure that you remove as much air from the bag as possible as you want all the chicken in the marinade. Turn the bag at the half way mark if the chicken isn’t completely submerged to soak all sides of the chicken.

I made this recipe in the winter so if you aren’t up to barbeque in the cold you can cut the chicken into bite sized pieces and cook them in a frying pan, add some of the marinade if you like. If you do add the marinade while the chicken is cooking, be sure to add it add it at the beginning and then it cooks off completely. Cook the chicken until no longer pink.

If you are wanting to barbeque, pre-heat the grill to medium setting and place the whole chicken breasts on the grill. Grill for about 15 minutes, turning once, until the chicken is no longer pink.Napa 3

To make the salad; coarsely chop the napa cabbage and place in a large bowl add to it  chopped zucchini, green pepper, celery, green onion, shredded carrots, and shredded diakon radish (you can substitute in red radishes if you cannot find diakon radish). If you like, you can garnish the salad with cilantro.Napa 1Napa 2

The dressing for this salad also has a teriyaki flavour. I had homemade peanut sauce, see recipe below, which I used and added hoisin sauce, sesame oil, red wine vinegar and grated ginger root.

Chicken Marinade
  1. 2 tbsp soy sauce
  2. 2 tbsp lime juice
  3. 2 tbsp liquid honey
  4. 1 tbsp ketchup
  5. 1 tbsp grated gingerroot
Salad
  1. 5 cups napa cabbage, coarsely chopped
  2. 2 medium carrots, shredded
  3. 2 cups diakon radish, shredded
  4. 1 green pepper, chopped
  5. 1 medium zucchini, chopped
  6. 4 green onions, sliced
  7. 3 stalks celery, chopped
Salad Dressing
  1. 1/4 cup peanut sauce
  2. 1/4 cup hoisin sauce
  3. 1 tbsp red wine vinegar
  4. 1 tbsp sesame oil
  5. 1 tsp grated gingerroot
Instructions
  1. Place 4 boneless, skinless chicken breasts in a zip-lock bag.
  2. Whisk all the marinade ingredients in a small bowl. Pour the marinade over the chicken in the zip-lock bag. Close tightly and refrigerate for at least 3 hours, ideally 4 hours. Make sure that you remove as much air from the bag as possible as you want all the chicken in the marinade.   3. Remove the chicken from the marinade and cut into bite sized pieces. Cook the chicken in a frying pan, add some of the marinade if you like. If you do add the marinade while the chicken is cooking, be sure to add it add it at the beginning and then it cooks off completely. Cook the chicken until no longer pink.
  4. Salad: coarsely chop the napa cabbage and place in a large bowl add to it chopped zucchini, green pepper, celery, green onion, shredded carrots, and shredded diakon radish.
  5. Garnish the salad with cilantro.
Salad Dressing
  1. Whisk all ingredients in a small bowl, refrigerate until ready to use.
Notes
