Healthy Apple Cookies

These cookies smell just like apple pie as they are baking! If I could eat the smell I would have. 🙂  yum!!

Healthy Apple Cookies

I’ve been experimenting with apple cookies for the past few days trying to get a cookie that tastes like apple pie while being healthy. These cookies have a mild apple taste and have no refined sugar. You can use either honey or maple syrup to sweeten the cookies. Honey has a more subtle taste while the maple syrup will add a stronger sweeter flavour. We have replaced half the oil with applesauce and use a combination of all purpose and whole wheat flour.

I decided to roll the cookie dough in a mixture of sugar, cinnamon, nutmeg and cloves to enhance the apple pie flavour of the cookie. It worked really nice since the cookies themselves aren’t overly sweet. The light coating of sugar and cinnamon adds just the right touch of added sweetness. Little apple cookies morsels that are healthy and delicious!

In a medium bowl, combine apple, egg, honey, applesauce and oil. In a large bowl combine flours, baking powder, cinnamon and salt. Mix the apple mixture with the flour mixture, don’t over mix as the cookies will be heavy and tough.

Scoop about a tablespoon of dough and roughly shape into a ball. The dough will be sticky so do the best you can. Drop into the rolling mixture and coat the cookie. Place cookie dough onto prepared cookie sheet. Leave about an inch or so between cookies as the cookies don’t spread a lot. You can flatten the dough slightly if you would like.

Bake for 10-12 minutes.
