Quinoa taco salad is a delicious healthy main meal. It combines the taco salad flavour with the mild taste of quinoa. So quick and easy to make, it takes only 20 minutes from go to table!

I love this meatless dish. It is so fast and easy to make, it really only takes 15 minutes; as the quinoa is cooking you have time to get the rest of the ingredients prepped. Quinoa is a complete protein so you don’t miss the beef at all in this taco salad. I also made a batch of much healthier pita chips to serve with the salad instead of taco chips.

I mixed most of the toppings (carrots, onion, red pepper, corn) right into the quinoa and bean mixture and served it over a bed of spinach. Then I topped it with tomato, salsa, guacamole and cheese. If you’d prefer you can assemble each plate according to what each person would like for their salad. Whatever you choose you’ll love this salad! 


Cook quinoa according to package directions. Stir in the beans and taco seasoning to the cooked quinoa while it is still warm. Evenly distribute quinoa bean mixture onto serving plates. Top with spinach/lettuce, fresh tomatoes, shredded carrots, chopped onion, chopped red bell pepper, corn, avocado/guacamole, shredded cheese, salsa and sour cream.

Ingredients
  1. 1/2 cup quinoa, uncooked
  2. 1 1/2 cups black beans, drained and rinsed
  3. 1 1/2 cups pinto beans, drained and rinsed
  4. 1 tablespoon taco seasoning
Topping Options
  1. Spinach or lettuce
  2. 1 small sweet onion, chopped
  3. 1 medium carrot, shredded
  4. 1/2 red bell pepper, chopped
  5. 2 plum tomatoes, chopped
  6. 1/2 cup corn
  7. 1/2 cup avocado cubes or guacamole
  8. 1 cup cheddar cheese, shredded
  9. 1/2 cup salsa
  10. 1/4 cup sour cream
  11. pita chips
Instructions
  1. Cook quinoa according to package directions.
