A sweet and spicy chicken drumstick. Honey, barbecue sauce and chili powder are mixed together to make a delicious sauce that is poured over the chicken before baking. It is then thickened on the stove to use as a dipping sauce to serve. Yum!

So for the big finale, chicken drumsticks for the 12 drummers drumming! I hope you have enjoyed the recipes. Janice and I had a fun time coming up with our food ideas to match the countdown. 🙂

So for this delicious sweet and spicy chicken… You can use skinless chicken drumsticks or boneless, skinless chicken thighs for this recipe. Most of the time I use the thighs as it is easier for my kids to eat the chicken.

Also the recipe says to thicken the sauce on the stove after the chicken has finished baking. The sauce does thicken a bit as it cools so I usually skip that step and just let it stand for 20 minutes. Then I spoon some over the chicken before serving. I like this chicken as a main meal served with quinoa. Don’t forget to drizzle so extra sauce over quinoa as well. 🙂

Preheat oven to 375F. Spray a 9×13 inch baking pan with cooking spray. Arrange chicken drumsticks in a single layer in the baking pan. 

In a medium bowl, add remaining ingredients, except cornstarch, and mix well.

Pour sauce evenly over the chicken.
Bake uncovered for 35 – 40 minutes or until chicken is cooked.

Remove chicken from pan. Pour sauce into a small pot. Combine cornstarch with 2 teaspoons of water and mix until smooth. dd mixture to the sauce in the pot. Bring to boil, stirring constantly, until sauce has thickened. It wont take long. Serve with the chicken as extra dipping sauce, either on the side or right on top of the chicken.

Ingredients
  1. 12 - 15 skinless chicken drumsticks (see note)
  2. 3 cloves garlic, minced
  3. 1/3 cup barbecue sauce, your favourite
  4. 2 tablespoons soy sauce
  5. 2 tablespoons Dijon mustard
  6. 2 tablespoons honey
  7. 2 tablespoons lemon juice
  8. 1 teaspoon chili powder
  9. dash of hot sauce
  10. 1 teaspoon corn starch, used to thicken sauce after baking
Instructions

Notes
  1. You can use skinless boneless chicken thighs in place of drumsticks.
