Healthy Lemon Loaf

A healthy lemon loaf that is super moist and has a full lemony flavour. It is made with buttermilk and applesauce to replace some of the oil and sugar.

You are going to love this healthy lemon loaf! It is made with ingredients like applesauce and buttermilk and a mix of whole wheat and all purpose flour. Lemon zest enhances the tart lemon flavour. Then the loaf is drizzled with a light lemon glaze. Perfect for brunch, tea or just whenever you want a sweet lemon snack.

This loaf is perfect for serving to guest that are visiting for the holidays. It is really easy to make and has the added benefit of healthier ingredients. You are going to leap for joy over this loaf. 🙂 That is why we decided to use it for our countdown, day 10.

In a large bowl combine the flours, sugar, baking powder, baking soda and salt.

Lemon Loaf

In a medium bowl combine lemon zest, milk, buttermilk, oil, applesauce, eggs, vanilla and lemon juice.

Add the wet mixture to the dry and stir until just incorporated. Pour batter into a greased loaf pan.

Lemon Loaf

Bake at 350F for 40-50 minutes or until a toothpick inserted into the centre of the loaf comes out clean. If you find that the centre of the loaf is still not cooked but the top is getting brown you can cover the loaf with tin foil “tent” to prevent it from browning to much while it finishing cooking.

Remove from oven and cool completely on a wire rack before removing from the loaf pan.

To make the lemon glaze, mix the powdered sugar with lemon juice in a small bowl. Drizzle over cooled loaf.

Ingredients
  1. 1 cup all purpose flour
  2. 1/2 cup whole wheat flour
  3. 1/2 cup sugar
  4. 1 1/4 teaspoon baking powder
  5. 1/4 teaspoon baking soda
  6. 1/2 teaspoon salt
  7. 2 tablespoons lemon zest
  8. 1/2 cup milk
  9. 1/4 cup buttermilk
  10. 1/4 cup oil
  11. 1/4 cup applesauce
  12. 2 eggs
  13. 1 1/4 teaspoon vanilla
  14. 1 teaspoon lemon juice, or juice of half a lemon
Glaze
  1. 1 cup powdered sugar
  2. 2 tablespoons lemon juice
Instructions
  1. Preheat oven to 350F. Grease a 9x5 loaf pan and set aside.
  2. In a large bowl combine the flours, sugar, baking powder, baking soda and salt. In a medium bowl combine lemon zest, milk, buttermilk, oil, applesauce, eggs, vanilla and lemon juice.
  3. Add the wet mixture to the dry and stir until just incorporated. Pour batter into a greased loaf pan. Bake at 350F for 40-50 minutes or until a toothpick inserted into the centre of the loaf comes out clean. Remove from oven and cool completely on a wire rack before removing from the loaf pan.
  4. To make the lemon glaze, mix the powdered sugar with lemon juice in a small bowl. Drizzle over cooled loaf. The glaze will harden.
