For five golden rings we bring you beautiful golden acorn squash rings. Today’s recipe for the fifth day of Christmas comes from www.ohmyveggies.com. She has an amazing food blog and you should check her out. I slightly modified her recipe but it is pretty close to the same. This recipe is meatless but I have seen similar posts that include turkey sausage in the filling and I’m sure that this would taste fantastic.

I found it difficult to cut the acorn squash into rings. I kept thinking I was going to lose a finger in the process. Maybe I’m a weakling but for next time I’m going to microwave the squash for about 3 minutes just to soften it slightly to make it easier to cut. I also saved the top and bottom that I cut off to get the rings and peeled off the rind and diced the squash. I used it in the filling to stuff the rings.

So to make these “golden rings”…

Cook quinoa in broth according to package directions. Set aside.

Heat olive oil in a skillet over medium high heat. Add onions and cook about 10 minutes or until onions are soft and slightly browned. Add apple and leftover squash, and cook another 5 minutes.

Combine quinoa, onion mixture, cheese, cranberries, sage, walnuts, and egg in a large bowl.

In a small bowl combine butter and maple syrup. Brush over the tops of each acorn squash ring.

Heat oven to 375F.

Stuff quinoa mixture into the centre of each ring. Make sure to pack it tightly and fit as much stuffing as you can into the centre of each ring.

Bake 30 minutes or until tops are golden brown and squash is tender.

Ingredients
  1. 2 medium acorn squash, cut into 1/2 inch rings, remove guts save any leftover squash pieces and dice to use in the filling
  2. 1/2 cup quinoa
  3. 1 cup chicken broth
  4. 2 teaspoons olive oil
  5. 1 medium onion, diced
  6. 1 large apple, diced
  7. 1/2 cup shredded old cheddar cheese
  8. 1/3 cup dried cranberries
  9. 1 teaspoon dried sage
  10. 1/4 cup chopped walnuts
  11. 1 egg
  12. 1 tablespoon butter, softened
  13. 1 tablespoon maple syrup
Instructions
