Overnight Pumpkin French Toast

A delicious pumpkin and cinnamon flavoured French toast casserole. A pecan brown sugar streusel topping adds a wonderful sweet crunch.


This is perfect for serving for breakfast or brunch. Preparing it the night before means that you have almost no work in the morning. It’s great for when you have company as it serves a lot of people but doesn’t have you standing at the stove all morning.

Following our countdown for Christmas, we are doing french toast for Three French Hens. 

I love the pumpkin flavour of this french toast. It adds such a nice flavour and sweetness to the casserole. If I ever make regular French toast again, (which I may not since this recipe is so easy), I am going to add pumpkin purée to the eggs. I just love the taste! I also love the pecan brown sugar streusel topping. The pecans add an amazing crunch which adds some texture to the casserole. I would eat just the streusel topping if it was acceptable. 🙂

Overnight Pumpkin French Toast
One thing to keep in mind is that the French toast takes about 45 minutes to bake in the morning. So make sure that you are up first to put it in the oven so it’s ready when everyone is hungry.

Grease a 9×13 inch baking pan. Spread the bread cubes evenly in the pan.

In a large bowl, whisk together eggs, milk, pumpkin, vanilla, maple syrup (or honey), cinnamon, nutmeg and ginger. Pour over the bread cubes> use a spoon or fork to press the bread into the egg mixture to make sure the bread is all soaked. Cover with plastic wrap and refrigerate overnight.

In the morning, remove pan from refrigerator and uncover. Preheat oven to 350F. 

Make streusel topping by combining butter, brown sugar, nuts and cinnamon in a small bowl. Overnight Pumpkin French ToastSprinkle over the top of the bread mixture.

Bread Mixture
  1. 10 cups of cubed French bread
  2. 6 large eggs
  3. 2 cups milk
  4. 1/2 cup pumpkin puree
  5. 2 teaspoons vanilla
  6. 2 tablespoons maple syrup
  7. 1 1/2 teaspoons cinnamon
  8. 1/4 teaspoon nutmeg
  9. 1/4 teaspoon ginger
Streusel Topping (made in the morning)
  1. 3/4 cup brown sugar
  2. 1/4 cup flour
  3. 1/2 teaspoon cinnamon
  4. 1/4 cup butter, softened
  5. 1/2 cup chopped pecans
Instructions
