Soft Tacos

A spicy bean, vegetable and ground beef base topped with fresh tomatoes, shredded lettuce, sour cream, and cheese all wrapped up in a soft tortilla.

This meal is sure to be a hit with friends and family. The ground beef mixture takes only about 20 minutes to prepare and then everyone can assemble their own tortilla with the toppings of their choice.

In a large skillet over medium high heat cook ground beef until no longer pink. Add onion, garlic, bell peppers , carrots, and zucchini. Cook until vegetables are tender about 5-10 minutes. Stir in salsa and taco seasoning. Cook 5 minutes. Stir in kidney beans, or black beans. Heat through.

Now the fun part; assemble the tortillas.
Prepare the toppings while the ground beef mixture is cooking. Shred the cheese, cut the lettuce into strips, dice or slice the tomatoes, put extra salsa in a bowl and sour cream in a small bowl.
Down the centre of a tortilla spread a generous helping of the beef mixture. Add toppings of your choice. Fold up bottom and roll in sides and enjoy!

Ingredients
  1. 1 lb lean ground beef
  2. 1 large onion, chopped
  3. 4 cloves garlic, minced
  4. 1 bell pepper, colour of you choice
  5. 2 medium carrots, shredded
  6. 1 medium zucchini, shredded
  7. 1 - 1 1/2 cup salsa
  8. 1 can (19 oz/540 ml) kidney beans, or black beans
  9. 6 tortillas
  10. 2 cups lettuce, cut into strips
  11. 1 cup cheddar cheese, shredded
  12. 2 tomatoes, chopped
  13. Salsa
  14. Sour cream
Instructions
