Sweet Potato and Turkey Bake

A different take on the classic Shepherd’s Pie, this dish has a mashed sweet potato topping over a turkey and vegetable filling. So delicious you’ll be asking for seconds.

Well it was thanksgiving here last weekend and that means leftover turkey. I usually will make a pot turkey soup with all the leftovers, but the turkey I bought this year was massive and I had leftovers of the leftovers. 🙂 I’ve made this recipe a few times before, and I love it. I really like the sweet potato topping as I am not really a potato person. And the vegetables and turkey filling, yum!Sweet potato turkey bake1

 

First start by cooking your sweet potato topping. In a medium saucepan, add your diced sweet potato and fill about 1/2 – 3/4 full with water. Bring to a boil, reduce heat and simmer until the sweet potato is soft. If there is still lots of water in the pot, drain some away. Add butter and milk and mash to desired consistency. I like having it a bit chunky. Set aside.

For the filling:

In a large saucepan over high heat, sauté the onions, carrots, celery, and garlic. Add 1 tsp thyme, salt and pepper, 1 tbsp flour and 2 cups turkey stock. Stir until thickened. Then add the green beans, corn, and chopped turkey. Stir well. 

Pour the filling into the bottom of a medium casserole dish. Top with the mashed sweet potato. Make sure the sweet potato covers all over the top.

Bake for 40 minutes at 350F. Cool for 10 minutes before serving.

Ingredients
  1. 2 medium sweet potatoes, cubed
  2. 1/4 cup milk
  3. 1 tablespoon butter
  4. 1 onion, diced
  5. 2-3 cloves garlic, minced
  6. 2 stalks celery, diced
  7. 2 medium carrots, diced
  8. 2 cups green beans
  9. 1 cup corn
  10. 3 cups cooked chopped turkey
  11. 2 cups chicken/turkey stock
  12. 1 tablespoon oil
  13. 1 teaspoon thyme
  14. 1 tablespoon flour
  15. salt and pepper, to taste
Instructions
