Spicy Vegetable Pasta Bake

A spicy cheesy vegetable filled pasta dish. It can be made with or without the ground beef.

This dish a kind of a take on macaroni and cheese. But then, maybe not with the amount of vegetables I have loaded in. I’m actually a bit amazed at the number of different vegetables. And it tastes amazing. It is a spicy dish though, so adjust the heat to you own taste. I have made this with and without the ground beef and both ways are great. Try it both ways yourself and see which is your favourite.

Spicy Vegetable Pasta Bake
Cook pasta according package instructions. Drain and set aside.
In a large skillet over medium high heat cook ground beef until no longer pink. Add onion, garlic, carrots, zucchini, squash and red pepper. Cook until vegetables about 5 minutes then add cauliflower and cook until vegetables are tender.

Add broccoli, cayenne pepper and hot pepper flakes and cook about 3 minutes or until broccoli bright green in colour.

Whisk together the milk and flour. Pour over vegetables and mix well. Remove from heat and stir in cooked pasta and cheese.

Spoon the mixture into a large baking dish and top with more cheese. Bake at 350F for 15 minutes. Serve warm.

  1. 1 lb ground beef (if desired)
  2. 1 large onion, chopped
  3. 4 cloves garlic, minced
  4. 1 large carrot, chopped
  5. 1 medium zucchini, chopped
  6. 1 red bell pepper, chopped
  7. 1 cup butternut squash, cubed (if desired)
  8. 1/2 - 1 cup cauliflower florets
  9. 1 cup broccoli florets
  10. 3 tablespoons flour
  11. 1 1/2 cups milk
  12. 2 cups cheddar cheese, shredded
  13. 1/4-1/2 teaspoon cayenne pepper
  14. 1/4-1/2 teaspoon red pepper flakes
  15. 2 cups pasta, uncooked
