Refried Bean Burritos

Refried beans and vegetables wrapped in a soft tortilla. A delicious meatless Monday meal!

Is it unusual that I wanted to try these burritos mostly because I wanted to try making my own refried beans? I hope not because that is exactly why I made them! Well, sort of why, I do like burritos as well. 🙂 I have made slow cooker refried beans with bacon once before but found them to be incredibly salty. No one wanted to eat them so I didn’t bother again. If a recipe calls for refried beans I use mashed black beans mixed in with the filling instead. It tastes great and I am happy. But change is a good thing, so when these came up on my menu today I decided that I would make refried beans this time. I have a recipe for refried beans that I have never tried that doesn’t use bacon. I was curious to see if it would be less salty. 

Some nutritional information about the beans. You all know that I love to use beans in many different recipes; energy bars, salads, I have even tried them in brownies (I’ll do a post for those soon). Beans are a great source of iron, antioxidant vitamin C and energy-providing B vitamins. Beans are also one of the best sources of soluble and insoluble fibre which help maintain digestive health and lower cholesterol. If I think beans will taste good in a recipe I usually will add them. 

 It is actually very little work to make your own. Black or kidney beans get tossed into the food processor along with chili powder, cayenne pepper, salt, olive oil, and garlic.

Sauté an onion then stir in two chopped tomatoes. Cook for about 2 minutes.

Add the onion mixture to the food processor and pulse until mostly smooth. Now for the refry part. In a lightly oiled large skillet on medium heat add the bean mixture. Stir until the mixture is dry about 15-20 minutes. Remove from skillet and set aside.

In the same skillet, make the vegetables filling for the burritos. Cook onion, garlic, carrots, zucchini and bell pepper, chili powder, cumin and oregano.

Add salsa. Cook for another 5 minutes.

Spread a layer of refried beans over the surface of a tortillas. Spread the filling down the middle of the tortilla and top with cheese. Refried Bean Burrito_square

Fold up the top and bottom and roll in the sides. Place seam side down in a 9×13 baking dish. Top with extra salsa. (opps, forgot to take the picture with the salsa)

Bake at 400F for 15 minutes. Remove and sprinkle with cheese and bake an additional 5 minutes. Serve with sour cream and salsa.

For the Refried Beans
  1. 1 can (19 oz/ 540 ml) black, kidney or pinto beans
  2. 1 small onion, chopped
  3. 2 medium tomatoes, chopped
  4. 1 teaspoon chili powder
  5. 3/4 teaspoon salt
  6. 2 tablespoons olive oil
  7. 2 cloves garlic
  8. dash cayenne
Fro the Burritos
  1. 1 teaspoons oil
  2. 1 large onion, chopped
  3. 3 cloves garlic, minced
  4. 2 bell peppers, any colour, chopped
  5. 2 medium carrots, shredded
  6. 2 teaspoons chili powder
  7. 1 teaspoon cumin
  8. 1 teaspoon oregano
  9. 1 cup salsa
  10. 2 cups refried beans

  1. In the bowl of a food processor, fitted with the S blade, add the beans, chili powder, cayenne pepper, salt, olive oil, and garlic.
