Tomato Avocado Salad

Summer tomato salad with avocado and corn will be your new go-to salad. The fresh, juicy tomatoes in big chunks will have you going back for seconds (and thirds)!

This will be a favourite summer salad recipe once you try it. Fresh summer tomatoes are so flavourful, and when combined with ripe avocado, make a delightful salad.

Avocado Salad

This recipe can be a simple side salad or can become the meal itself by adding chicken! On a hot summer day, when you don’t want to be cooking or even be inside prepping a meal, this is a quick meal to make so you can get back to enjoying summer.

 Start by thawing the frozen corn. This can be done in the microwave. You don’t want it hot, you just want to thaw it. Start with a minute on the microwave and see if that is enough.

 Next get your fresh, ripe tomatoes. My husband and I grow a variety of tomatoes so I used green zebra, orange ox heart, black krim, and Moldovan green. Chop the tomatoes and toss them into a bowl (don’t chop the tomatoes too small as you want to have nice big chunks in your salad).

 Next, dice two or three ripe avocados and toss them in. I find works best to cut the avocado in half, then peel away the skins using your fingers (start at the end that the stem grew out of and peel back over the rest of the avocado). Be sure that your avocados are ripe, if they aren’t they won’t taste as good and they will be difficult to peel. I find that squeezing them so see if they are nice and soft works.

Then add in a sweet onion diced, a handful of sunflower seeds, fresh chopped cilantro, and the corn. Stir together.

If you want you can now add a can of chicken, drained and separated to make it a meal!

Dressing:

In a separate bowl, combine the olive oil, lime juice, sea salt, and cayenne pepper. Mix. Pour the dressing over the salad.

  1. 4 - 5 ripe tomatoes

  3. 1 medium onion
  4. 1 cup frozen corn, thawed
  5. 1/2 cup sunflower seeds
  6. cilantro (optional
Dressing
  1. 2 tablspoons olive oil
  2. 1/4 cup lime juice
  3. 1/2 teaspoon sea salt
  4. dash cayenne pepper
